The Tieguanyin cultivar was first introduced to Taiwan in the 1920s and uses a more traditional roasting process. This gives Taiwanese Tieguanyin its distinctive darker, roasted flavor compared to Anxi Tie Guan Yin, which is less oxidized, more easily found, and has a more green and floral aroma.
